Users can set the file open preferences in Teams by navigating to Settings ---> Files and change the preference either to open the Microsoft documents e.g Word, Excel, PowerPoint directly in Teams, Browser, or Microsoft Desktop Apps.
Now, Microsoft released a new option that you can change the preferences directly on the document itself.
Click on the document and select 3 dots (...) and click Open, select "Change default", in the pop-up window change the default preference option that changes on the above settings page as well.
Note: - This is user personal settings, by changing the settings on the document doesn't actually change for everyone in the channel.
